UNICAP is the company that manages the family owned coffee plantations, and a coffee mill established in 1935. UNICAP's coffee -a Bourbon varietal known for its deep aroma and enticing body, is shade-grown and harvested on a highland plateau in the cool mountainous range of Apaneca-Ilamatepec,where the soil contains some 30% organic matter, thus producing a bean with organoleptic qualities unique to high altitude areas.

After subjecting it to a stringent, quality-controled wet-process, coffee is sun-dried in clay patios until it reaches the optimum level of humidity; then it is stored in wood-lined, warehouses before undergoing to the dry process performed just before being shipped.
